BIG MAC SALAD (LOW CARB, GLUTEN FREE)

Salad :

    • 1 lb ground beef
    • 1 cup tomatoes (chopped)
    • 1/2 cup pickles (diced)
    • 1/4 tsp. 1 tsp black pepper
    • 8 oz romaine lettuce (or iceberg if desired)
  • 3/4 cup cheddar cheese (grated)
  • 1 teaspoon sea salt

Dressing :

 

? INSTRUCTIONS

  • Cook the ground beef in a pan over high heat. Salt and pepper. Sauté, separating them with a spatula, for about 7-10 minutes, until the beef is golden brown and the moisture has evaporated.
  • Meanwhile, puree all the ingredients for the dressing in a blender. If the dressing is thicker than you want, mash it with water or oil. Adjust the sweetener to taste.
  • Refrigerate until ready to serve.
  • Then mix the rest of the ingredients for this super salad in a large bowl. Add the ground beef. Mix with the dressing.
