Salad :
- 1 lb ground beef
- 1 cup tomatoes (chopped)
- 1/2 cup pickles (diced)
- 1/4 tsp. 1 tsp black pepper
- 8 oz romaine lettuce (or iceberg if desired)
- 3/4 cup cheddar cheese (grated)
- 1 teaspoon sea salt
Dressing :
- 2 teaspoons of mustard
- 1/2 tsp. 1 tsp smoked paprika
- 2 tbsp Gherkins (diced)
- 1/2 cup mayonnaise
- 1 teaspoon of white vinegar
- 1 1/2 tablespoon powdered erythritol (or any sweetener of choice)
? INSTRUCTIONS
- Cook the ground beef in a pan over high heat. Salt and pepper. Sauté, separating them with a spatula, for about 7-10 minutes, until the beef is golden brown and the moisture has evaporated.
- Meanwhile, puree all the ingredients for the dressing in a blender. If the dressing is thicker than you want, mash it with water or oil. Adjust the sweetener to taste.
- Refrigerate until ready to serve.
- Then mix the rest of the ingredients for this super salad in a large bowl. Add the ground beef. Mix with the dressing.
