Broccoli Ranch Casserole keto-friendly

This easy Broccoli Ranch Casserole is easy to throw together and so delicious! It is low carb and keto-friendly made without condensed soup or mayo and with cream cheese.

The ingredients are very few and you may already have them, so follow the recipe:

To make the recipe a success, you must respect the cooking time and temperature, so follow the steps described below step by step. Likewise, the ingredients must also be carefully measured and prepared before starting the recipe.

Ingredients:

  •  No-Sugar Bacon
  •  2 packs of cubed ham (prepackaged)
  •  1/2 cup diced onion 
  •  1 TBSP minced garlic
  •  2 microwaveable packages of broccoli flowerets 
  •  2 microwaveable packages of cauliflower rice 
  •  16 oz tub of sour cream
  •  8 oz of softened cream cheese
  •  1/4 cup of Heavy Whipping Cream
  •  1 Ranch dip packet
  •  Garlic Salt (to taste)
  •  Pepper (to taste)
  •  Onion Powder (to taste)
  •  1/4 cup shredded Gouda….(also 3 TBSP of Gouda for topping the casserole)
  •  1/4 cup shredded mozzarella (also 3 TBSP of mozzarella for topping the casserole)
  •  1/4 cup shredded Colby jack cheese (also 3 TBSP of Colby jack for topping the casserole)

instructions:

 Preheat oven to 350. 

Fry bacon until very done and crispy enough to crumble when cool. Once the bacon is done frying set it off to the side to cool and use the bacon grease to sauté your onions and garlic for about two minutes then add in the ham and fry it with the garlic and onions until it is browned very well. 

While frying up the bacon and ham you can microwave your broccoli and cauliflower rice. When done put broccoli, cauliflower rice, ham/onion/garlic mixture in a 9×13 casserole dish, and mix up together well then take cooled bacon and crumble all over and mix well. 

Sprinkle all of your cheeses on top then mix up together well with the rest of your ingredients in the casserole dish. 

In a microwaveable bowl put your cream cheese and zap it in the microwave for about 40 seconds just to soften it more than add to a big mixing bowl. 

In mixing bowl combine your cream cheese, sour cream, heavy cream, ranch packet, garlic salt, onion powder, and pepper. 

Mix well then pour into the casserole dish and mix up with all the other ingredients. Lastly, put reserved shredded cheeses over top. 

Bake at 350 degrees for about thirty minutes or until cheese is melted and bubbly and the casserole is heated thoroughly. Let cool about ten minutes after taking it out of the oven.

I use this for a fasting day where I am only going to eat dinner and want a high fat dinner. 

Note recipes

Make sure to use full-fat ingredients and not their lower fat options as far as your cheeses, sour cream, and cream cheese. In choosing cubed prepacked ham, I went for a no antibiotic/growth hormone/vegetarian fed option at Publix called Greenfield Natural Meat Co. Also, Publix now has no-sugar bacon at Walmart, a no-sugar bacon option is a brand called Gwaltney I believe. 

Also when I say garlic salt to taste etc….I’m one of those cooks that eyeballs everything and tastes it to see how it tastes and what more it needs lol so idk how much there but use the spices to your desired taste is what I meant.
