I FINALLY figured out a recipe for keto bread rolls that perfect to use as breakfast rolls or as a loaf of bread for your favorite cold slices. It isn’t disgusting! I’m super excited!
you’ll need to make these keto bread rolls :
- cream cheese
- mozzarella
- eggs (one for egg wash)
- almond flour
- baking powder
- Shredded cheddar
- Jalapeños
- Salt

- 2oz cream cheese
- 2 1/2 cups mozzarella
- 2 eggs (one for egg wash)
- 1 1/2 cups almond flour
- 1 tbsp baking powder
- Shredded cheddar
- Jalapeños
- Salt
Instruction
-Preheat oven to 400 degrees.
-In a large bowl, microwave cream cheese and mozzarella for 1 minute. Stir and microwave for an additional minute, stir again.
-Add 1 egg, almond flour and baking powder.
-Knead until dough is well mixed.
-Split evenly into 6 balls and place on cookie sheet.
-Brush with 1 egg white.
-Sprinkle with cheddar cheese.
-Add jalapeños on top.
-Season with salt.
-Bake for 12 to 15 minutes. (Depending on altitude of course…I live in the mountains, so it took 22 minutes.)
Variations I have tried, all depending on what you personally like:
Dough can be made into bagels, crust, biscuits, anything you desire.
Toppings can include bacon, pepperoni, course salt, everything bagel seasoning, etc.
I have also made breakfast breads out of this. (Adding cinnamon, nuts, cranberries.)
Delicious with avocado, eggs and bacon.
I made a turkey and cheese sandwich with this batch tonight.
Keep in mind how much cheese is in the batter, so I didn’t really need to add cheese to my sandwich…oops!

This particular recipe came out to 34 net carbs for the entire batch which equals 5.6 carbs for 1 roll (if divided into 6). They came out quite large, so you can always divide into smaller portions.
