Instructions
- Preheat the oven to 355 F (180 C).
- For 30 seconds melt the butter in the microwave (making sure it is not hot).
- Place the butter and erythritol in a mixing bowl and beat until everything is mixed. Then add the egg and vanilla and beat for 15 seconds.
- Add the almond flour, baking powder, salt, and xanthan gum. Then beat until homogeneous.
- Squeeze the dough and remove it from the bowl. Knead the chocolate chips with your hands.
- Divide and shape the dough into twelve balls and place them on a baking sheet.
- Bake for 10 minutes.
- Let cool before serving. Store in an airtight container for up to seven days.
