- 1 cup natural peanut butter (room temperature)
- 1/2 cup erythritol
- 2 tbsp almond flour
- 1/2 teaspoon vanilla extract
- 1 egg

- Preheat the oven to 350F.
- Line a baking sheet with parchment paper.
- In a bowl, combine all ingredients and mix until well combined.
- Using a 1 tablespoon cookie scoop, scoop out the dough and form it into balls. Place them on the baking sheet. Press down with a fork in a criss-cross pattern.
- Bake for 12 to 15 minutes.
- Let cool before serving.
- Store in an airtight container in the refrigerator.
