keto Peanut Butter Cookies

  • 1 cup natural peanut butter (room temperature)
  • 1/2 cup erythritol
  • 2 tbsp almond flour
  • 1/2 teaspoon vanilla extract
  • 1 egg

?‍? Instructions

  1. Preheat the oven to 350F. 
  2. Line a baking sheet with parchment paper.
  3. In a bowl, combine all ingredients and mix until well combined.
  4. Using a 1 tablespoon cookie scoop, scoop out the dough and form it into balls. Place them on the baking sheet. Press down with a fork in a criss-cross pattern.
  5. Bake for 12 to 15 minutes.
  6. Let cool before serving.
  7. Store in an airtight container in the refrigerator.
