Ingredients

  • 7 large eggs
  • 2 cups  almond flour (170g / 6oz)
  • 1/2 cup unsalted butter (100g / 3.5 oz)
  • 2 tablespoons olive oil (30 ml)
  • 2 Tbsp chia seeds (optional)
  • 3 Tbsp sesame seeds (optional)
  • 1 teaspoon  baking powder
  • 1/2 teaspoon of xanthan gum
  • 1/4 teaspoon salt
  • nutritional yeast for a little extra taste (optional)

 

Instructions

  1. Preheat the oven to 180C (355F)
  2. In a medium mixing bowl, whisk large eggs together.
  3. Add the remaining ingredients and mix well. Using an electric whisk often helps with this recipe as the mixture can get quite thick.
  4. Pour into a loaf pan lined with baking paper. Place sesame seeds on top (optional)
  5. Bake for 40 minutes.
  6. Can be cut into 16 slices. It is best to keep it in the refrigerator for up to 5 days or frozen for up to 3 weeks.
