I love keto blueberry bread. Just mix a few ingredients together and put it in the oven, and the result is delicious, chewy bread.

The ingredients are very few and you may already have them, so follow the recipe:

 So, for the recipe, you will need:

  • almond flour
  • coconut flour
  • baking powder
  • erythritol
  • heavy whipped cream
  • soft butter
  • vanilla extract
  • eggs
  • blueberries

Ingredients:

  • 2 cups of almond flour.
  • 2 tablespoon coconut flour
  • 1 1/2 teaspoon baking powder
  • 1/2 cup erythritol
  • 3 tablespoons of heavy whipped cream
  • 3 tbsp soft butter
  • 1 teaspoon vanilla extract
  • 5 medium eggs
  • 1/2 cup blueberries

  1. In a bowl, add the eggs, vanilla extract, and sweetener.
  2. Blend for 2-3 minutes until the mixture looks frothy.
  3. Add the whipping cream and mix again.
  4. In another bowl, mix the almond flour, baking powder, and coconut flour.
  5. Combine the wet and dry ingredients using the blender.
  6. Add the butter and continue to blending.
  7. Stir in the blueberries and transfer the dough to a loaf pan.
  8. Bake for about 45-50 minutes at 350F or until cooked through.
  9. Let it cool and enjoy it.
  10. It is best stored in the refrigerator for up to 5 days or frozen for up to 3 weeks.

Recipe Notes

You can replace blueberries, as you wish. Here are some examples:

  • Raspberries – chocolate (add 85% Lindt chocolate)
  • Blueberries – lemon (add the zest of a small organic lemon)
  • Cinnamon and nuts made with muesli/ granola keto recipe

I love my blueberry bread. However, you can cut back on the number of blueberries used if you want to cut down on the carb count even more.

The cooking time varies between 30 and 50 minutes so I suggest starting with 30 min and doing the toothpick test and if not cooked continue until it comes out clean
