Keto Blueberry Muffin

Here is a recipe for keto blueberry muffin that can be used as a basic recipe. You can replace blueberries, as you wish. Here are some examples:

  • almond flour, see notes
  • granulated Swerve (erythritol)
  • baking powder
  • xanthan gum, optional
  • eggs
  • heavy cream
  • melted butter
  • vanilla extract
  • lemon juice
  • blueberry

Ingredients:

  • 2 cups almond flour, see notes
  • 5 tablespoon granulated Swerve (erythritol)
  • 1 teaspoon baking powder
  • 1 teaspoon xanthan gum, optional
  • 4 eggs
  • 1/2 cup heavy cream
  • 1/2 cup melted butter
  • 1 tablespoon vanilla extract
  • 1 tablespoon lemon juice
  • 3/4 cup blueberry

  1. Place the grill at the center of the oven. Preheat the oven to 180 ° C (350 ° F). Place 12 paper or silicone boxes in the muffin pan.
  2. In a bowl, mix the almond flour, Swerve, baking powder, and xanthan gum (optional).
  3. In another bowl, combine the eggs, cream, melted butter, vanilla, and lemon juice with a whisk until the mixture is smooth. Add the dry ingredients and mix with a wooden spoon or spatula until the flour is well incorporated. Stir in blueberries or berries of your choice.
  4. Using a large ice cream spoon, divide the dough into the muffin cups.
  5. Bake the muffins in the oven for about 20 to 30 minutes (depending on the humidity of the fruit). Check if the dough is cooked by pricking a toothpick in the center of a muffin. It must come out without any paste attached, but it will be blue because of the blueberries.

For even softer muffins, you can replace 1/4 cup of almond flour with 1/4 cup of oat fiber.
