Keto Cinnamon Rolls


Cinnamon has mainly antioxidant, antibacterial, and anti-inflammatory virtues. It is mainly used to stimulate the immune system, relieve digestion problems, and naturally treat type 2 diabetes.

For the rolls:

  • ¾ c. Almond flour
  • 2 oz. Cream cheese
  • 2 c. Mozzarella cheese shredded
  • 1 teaspoon Vanilla
  • 1 tablespoon Erythritol
  • ⅛ teaspoon Xanthan gum
  • 2 teaspoon Baking powder
  • 1 Egg beat

For the filling

  • 1-2 teaspoon Cinnamon
  • 1 tablespoon Erythritol

For the topping:

  • 2 tablespoons Erythritol
  • 2 tablespoons Cream cheese
  • 2 tablespoons Heavy whipping cream


1. Preheat the oven to 350 degrees.

2. Place the mozzarella and cream cheese in a microwave-safe bowl and microwave on high for 1 minute. Stir and return for 30-second intervals until cheeses are completely melted and can be combined.

3. Stir in the almond flour, xanthan gum, and baking powder until homogeneous. If you need to, you can put the mixture back in the microwave for 15 to 30 seconds to soften.

4. Stir 1 tablespoon of erythritol into the hot dough.

5. Mix 1 beaten egg and 1 teaspoon of vanilla. Stir until completely absorbed and mix.

6. Place parchment paper on a countertop and sprinkle almond flour on the surface.

7 Place the dough on the paper and place another piece on top. Slowly roll out the dough into a roughly rectangular or square shape.

8. Dust 1 tablespoon of erythritol and 1-2 teaspoons of cinnamon over the dough.

9. Roll the dough slowly and carefully.

10. With a sharp knife, slice 11 to 12 circles of dough.

11. Put the cut cinnamon rolls in a baking pan lined with parchment paper or another ovenproof dish.

12. Cook uncovered for 10 to 20 minutes until golden brown on top and slightly crispy around the edges.

13. While buns are baking, beat 2 tablespoons of cream cheese, 2 tablespoons of erythritol, and 2 tablespoons of heavy whipping cream at high power until smooth and creamy.

14. Take the cinnamon rolls out of the oven, allow to cool slightly and top with a generous amount of cream cheese filling while still slightly warm.
