No Bake Lemon Cheesecake Bars

?First Step

▪️For the crust

  • ?2 cups of almond ( if you use the powder or flour, it’s better to roast it in the pan first)
  • ? 70 grams of unsalted butter
  • ? 1/4 tsp of salt
  • ? 1 TBSP of powdered Erythritol

? mixed all the ingredients and gently press down on the crumbs using your fingers, until the crumbs are a nice even layer at the bottom of the pan. Leave it in the fridge for 30 mins.

?For the filling

▪️Cheesecake

  • ? 350 grams of cream cheese
  • ? 3-4 TBSP of powdered Erythritol
  • ? 1/2 cup of whipping cream

? Beat cream cheese, then Erythritol and whipping cream. Cut the cream cheese into chunks and place in the bowl of an electric mixer, mix until smooth, soft and creamy. Put the filling into the crust then put it back in the fridge for another 30 mins.

?For the topping

▪️Lemon curd

Lemon curd is simple and easy. It takes only 4 simple ingredients. You’ll need: lemon juice , Erythritol, eggs, butter.

  • ? 1 cup of fresh lemon juice
  • ? 3/4-1 cup of powdered Erythritol
  • ? 4-5 egg yolks
  • ? 100 grams of unsalted butter, softened to room temperature

? Place egg yolks, Erythritol, lemon juice into the top pot of your double boiler. Using a silicone whisk, whisk until completely blended, then continue to whisk as the curd cooks. Constant whisking prevents the egg yolks from curdling. Whisk and cook until the mixture becomes thick. Remove pan from heat. Put the butter into the pan then whisk into the curd. The butter will melt from the heat of the curd. Pour curd into the top of the cake and leave it in the fridge for a few hours.
